Wee Cook Friday: Easter Bread!

To conclude the “Wee Cook Friday” meatless meal series, I wanted to reprise my very favorite recipe for this holiday season, my Easter Bread.  We like to make this for Good Friday supper, or for Easter breakfast (especially if there’s company).  We always make two loaves, and play “Easter Bunny” by leaving one on someone’s door stop! While I’m on my writer’s retreat, I thought I’d reprise this recipe from “Mommy Monsters” for Easter Bread — makes a great Good Friday supper, or Easter breakfast treat! Easter Bread 2-3/4 C flour 1/4 C sugar 1 tsp salt 1 pkg dry yeast 2/3 C milk 2 […]

Wee Cook Wednesdays: Five-Generation Potato Salad

The Easter ham now chilling in the fridge, right beside the Easter eggs … Hmmm, what to do for dinner tonight?!  I know!  Whip up a little potato salad to go with some grilled ham sandwiches! Truth be told, I’m kind of a potato salad snob. Cold boiled potatoes with a little mayo and a dab of mustard does not a potato salad make, not even with a liberal dash of paprika. One bite of this, and you’ll never look at a hard boiled egg the same way again! Five-Generation Potato Salad – serves 12 8 potatoes, boiled and cubed 5-6 eggs, hard boiled and chopped […]

Wee Cook Wednesday: Christmas Eve Fruit Salad

Looking for something easy, festive … and green to tempt young palates to eat up quickly so you can make it to Midnight Mass? This is a childhood favorite, from my Aunt Suzy… she called it  “Pistachio Mold.” Which always sounded a bit … icky for such a delicious salad! 1 pkg instant pistachio pudding 1 can chunk pineapple, drained 1 can fruit cocktail, drained 1 jar marachino cherries, chopped 1/2 C chopped nuts 1 C mini marshmallows 1 large carton Cool Whip. Mix together everything but Cool Whip. Fold in the Whip and pour mixture into a Jell-O mold. Chill. Yum.

Wee Cook Wednesday: Quick-N-EZ French Bread

These past two weeks (*whine*) have been a little rough on the gums. No one told me that when you have four wisdom teeth removed, the rest of your mouth aches in sympathy. Milkshakes, apple sauce, yoghurt, and eggs. I’ve dropped five pounds in two weeks. (Silver lining in every cloud.) On Sunday I was feeling a bit better, so I decided to be brave. It was sleeting outside, and so it seemed the perfect day for a chunky chicken soup and some homemade bread. It also happened to be my mother’s birthday, and so I found a bread recipe that she used to make […]

Budget Better Recipes: Monkey Bread

Right now “BlogHer” is inviting women to share their cost-cutting grocery tips, and it inspired me to share one of my mother’s favorite recipes. When times were tough, Mom could feed a family of six (plus assorted strangers and friends) on less than $50 a week. Whenever she saw one of my bottomless-pit friends pulling in the driveway, she’d whip up a pan of biscuits — or pull out a loaf of her special pull-apart “Monkey Bread.” If you have a lot of left-over, about-to-turn milk on hand, this is a great way to use it up! Monkey Bread 4 cups milk, scalded (heated till bubbles […]

EMN Carnival #1: Tea Time!

I wanted this, our first Carnival, to be a friendly introduction to the women you’ll be hearing from now and again through EMN. We’re just getting started, and I’m hoping this time next month there are many more entries for you to peruse. But for now, just pour yourself a favorite cuppa, and “come and see.” (This is a picture of my favorite teapot … just ignore the tree!)
