Wee Cook No-Meat Fridays: A Vegetarian Feast!

I decided to rerun this post from June 2009 in honor of the first Friday in Lent, for those who would like a meatless meal idea! The Vacation Bible School program at my church this year is called “Adventure with the Apostles,” and explores the Church around the world, each day focusing on a different part of the globe: Today, in honor of the Church of Asia, I have for you this tasty and inexpensive lentil-and-rice feast (with Naan bread and cucumbers with yoghurt dressing) that is easy enough for the whole family to help with!  To make Naan Bread, you will need 1 tsp […]

Wee Cook Wednesday: Pastie Time!

Today I found this link for a wonderful lunchtime or quick supper (if made ahead and frozen) treat at Aussie Therese’s blog. Pasties are a popular dish here in Michigan … a fair amount of work, but worth it! I was especially intrigued by this recipe, which calls for puff pastry instead of pie dough (which can be a hassle). I’m “translating” the recipe into American measurements here: Ingredients: 1kg carrots (about 2 pounds, or 10-12 carrots) 1 kg potatoes (6-8 medium). 500 grams onions (3 medium onions). Curry. Salt Pepper 18 sheets frozen puff pastry. (For the carnivores in the crowd, you can also […]

Wee Cook Wednesday: Quick-N-EZ French Bread

These past two weeks (*whine*) have been a little rough on the gums. No one told me that when you have four wisdom teeth removed, the rest of your mouth aches in sympathy. Milkshakes, apple sauce, yoghurt, and eggs. I’ve dropped five pounds in two weeks. (Silver lining in every cloud.) On Sunday I was feeling a bit better, so I decided to be brave. It was sleeting outside, and so it seemed the perfect day for a chunky chicken soup and some homemade bread. It also happened to be my mother’s birthday, and so I found a bread recipe that she used to make […]

Wee Cook Wednesday: Corn Spoon Bread

This moist and fluffy corn bread is a favorite at potlucks and casual family dinners. Tastes great with turkey, too! If your crew isn’t fond of Swiss cheese, cheddar works well, too! Kids enjoy mixing it together and sprinkling the cheese. I like eating the leftovers for lunch with clam chowder or tomato soup. Heidi’s Corn Spoon Bread 2 eggs, slightly beaten 1-8 oz can cream-style corn 1-8 oz can whole kernel corn, drained 1 C sour cream 1/2 C butter or margarine, melted 1 pkg Jiffy corn bread mix 1 C shredded Swiss or cheddar cheese Combine all the ingredients except the cheese. Mix well, spread […]

Wee Cook Wednesday: Best-Ever Brownies

This recipe seemed particularly apt today … Those of us (myself among them) who are feeling down about last night, well the chocolate will boost that endorphin level!  And Governor Palin, if you’re reading this, know that this is one mother who still thinks you’re extraordinary, and if I had to do it all again I’d STILL vote for you!  I have a hard time finding the right words — it’s just too sad — so I’ll turn you to this lovely tribe I found, courtesy of Sarah Reinhard, by Carter Clews at GetLiberty.com. This morning at “Aussie Coffee Shop,” Therese also offers some consoling […]

Wee Cook Wednesday: Chicken Divan (“Chicken Stuff”)

When I was in junior high, I was into what could best be called “experimental cooking.”  I eschewed cookbooks, preferring to mix and match whatever was in the cupboard to put dinner together. One of my concoctions (the precise ingredient list I’ll spare you here) involved pork chops, curry, apple sauce, and brown rice. Dad took one bite, then turned to me and said, “Someday, my dear, your husband is going to have to thank me for this … Thanks to you, I have a cast iron stomach!” Eventually — when my father’s caustic commentary finally got through to me — I turned to my […]
