Wee Cook Wednesday: Heidi Hugs

Are you looking for a simple dessert for unexpected company, a project for a rainy day afternoons, or a tasty way to fill out a “Comfort Box” for a true chocolate lover? Try a batch of “Heidi Hugs.” These little gems disappear at every single school or church event I’ve ever brought them to, and when I am asked for the recipe, people often don’t believe how ridiculously simple it is. But that’s part of the beauty of it! Today I’m on the home stretch of my Catholic Children’s Bible Story Book project, so the blogging is going to be a bit sparse this week […]

Miracle Mondays: Disdain or Mercy?

Normally for this feature I look for the story of an inspiring mother, who loved despite all the odds. This week I think I found a keeper. Thanks, Sylvia. Disdain or Mercy? I’d also like to thank Mighty Mom for passing on this story of a truly Extraordinary Dad, Ed Freeman, a military hero who recently passed away at the age of 80. At least thirty men survived the Vietnam War because of his courage under fire.  On behalf of both these men — Sylvia’s cousin and Mr. Freeman — I’d like to offer the following. Eternal rest grant to them, O Lord, And may your perpetual […]

Tonight on EWTN: Adoptive Parents of 20, Donna and John Kurtz

Tonight on EWTN at 8:00 pm, “Life on the Rock” is featuring adoptive parents Donna and John Kurtz. Instead of choosing in vitro, they decided to open their hearts and home to children from all over the world, and started “St. Joseph’s House.” Thanks, Therese, for the heads up!

Adoption Tip: Connect Virtually with Your Child’s Mother

The other day I came across this extraordinary website that I wanted to share with all those out there who want more than anything to connect with the mother of your future child. Thanks to the miracle of new media, there are more options than ever to get the word out about your desire for family. If you are interested in domestic adoption, this is an option you should seriously consider. Remember, though … a website is only as good as it is effective in making connections. Put your URL out there every way you can think of. That is every bit as important as […]

Wee Cook Wednesdays: Five-Generation Potato Salad

The Easter ham now chilling in the fridge, right beside the Easter eggs … Hmmm, what to do for dinner tonight?!  I know!  Whip up a little potato salad to go with some grilled ham sandwiches! Truth be told, I’m kind of a potato salad snob. Cold boiled potatoes with a little mayo and a dab of mustard does not a potato salad make, not even with a liberal dash of paprika. One bite of this, and you’ll never look at a hard boiled egg the same way again! Five-Generation Potato Salad – serves 12 8 potatoes, boiled and cubed 5-6 eggs, hard boiled and chopped […]

EMN Mailbag: 4-year-old Guatemalan special needs child needs home.

Dear Heidi, I just wanted to let you know that on the advice of two therapists, we are trying to find a new family for our adopted 4 yo son, Paul. Both therapists told us that he should never have been placed in our home, since a child with his history is almost certainly attachment impaired and he will target our children to push us away and keep us from attaching to him. We are so heartbroken. We were grossly deceived about the child’s history and through their negligence, our biological children were vulnerable to emotional and physical abuse. Both counselors believe John will escalate into […]

Quote for the Day — from Julie at “Happy Catholic”

“…some people live in such a way that it is impossible to have any kind of happiness in their home, but then they go to church and sing songs and pray ‘in the spirit,’ hoping that God will somehow give them an infusion of joy to make it through the day. They are looking for some kind of heavenly transfusion that will bypass the misery of their daily lives and give them joy. But God’s desire is to transform their misery, not to bypass it.” Celebration of Disciplines by Richard Foster Thanks, Julie!
